Serving and Cooking Time
Preparation time 15minutes + 1-4 hour to marinate.

06 cloves garlic
01 tablespoon salt
01 tablespoon dark soy sauce
1/3 cup 90ml freshly squeezed lemon or lime juice
1/3 cup or 90ml sesame oil
1/2 cup fresh cilantro or coriander including the stems chopped plus extra leaves to garnish
01 egg plant with skin cut into 1/2 inch or 1cm thick slices
01 red bell pepper capsicum seeded and quartered
01 orange bell pepper capsicum seeded and quartered
01 yellow bell pepper capsicum, seeded and quartered
01 green bell pepper capsicum, seeded and quartered
08 button by mushrooms
01 onion, quartered
Put all the ingredients in a food processor and process to a fine, paste like sauce.
Put the vegetables in a large, flat dish or pan. Pour the marinade over the top and turn the vegetables in the marinade to coat.
Let sit for at least one hour or up to four hours in the refrigerator. Preheat a grill pan or a barbecue grill with a flat cook surface on high heat grill the vegetables in the pan or on the barbecue until softened and marked with brown lines about 10 minutes.
If you are cooking the vegetables in a grill pan you may need to do them in two or three batches.
Serve the vegetables hot or at room temperature garnished with the extra cilantro or coriander.
